As March sets in and spring arrives, treats such as Lucky Charms and Cadbury eggs are often infused into recipes in light of St. Patrick’s Day and the seasonal spirit. These four recipes offer sweetness paired with holiday treats, leaving bakers wanting more.
Lucky Charm Sugar Cookies

Ingredients
- 2 ¼ cups all-purpose flour
- ½ tsp baking soda
- ¼ tsp salt
- ¾ cup unsalted butter, softened
- ¾ cup granulated sugar
- ¼ cup light brown sugar
- 1 large egg
- 1 tsp vanilla extract
- ¼ cup Lucky Charms marshmallows

Directions
- Preheat the oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper.
- In a bowl, whisk together flour, baking soda and salt.
- In a larger bowl, beat the butter, granulated sugar and brown sugar for about two minutes, or until light and fluffy.
- Mix in the egg and vanilla.
- Slowly add the dry ingredients to the butter mixture, then mix until a soft dough forms.
- Add in three-fourths of the Lucky Charms Marshmallows. Save some to top the cookies.
- Scoop 1 ½ inch dough balls and place on the baking sheet about two inches apart.
- Press a few Lucky Charms marshmallows into the tops of the dough balls.
- Bake for 9-11 minutes until the edges are slightly golden.
- Optional drizzle: Once cooled, drizzle melted white chocolate and sprinkle a few extra marshmallows for decoration.
Cadbury Egg Blondies

Ingredients
- ½ cup unsalted butter, melted
- ¾ cup light brown sugar, packed
- ¼ cup granulated sugar
- 1 large egg
- 1 egg yolk
- 1 ½ tsp vanilla extract
- 1 ¼ cups all-purpose flour
- ½ tsp baking powder
- ½ tsp salt
- ¾ cup Cadbury Mini Eggs, roughly chopped
- Extra Mini Eggs for topping
Directions
- Preheat the oven to 350 degrees. Line an 8-by-8 inch pan with parchment paper.
- In a bowl, whisk melted butter, brown and granulated sugar until smooth and glossy.
- Mix in the egg, egg yolk and vanilla until fully combined.
- In another bowl, stir together flour, baking powder and salt.
- Mix dry ingredients into the wet ingredients until just combined.
- Add in the chopped Cadbury Mini Eggs.
- Spread batter evenly in the pan and press a few extra Mini Eggs on top.
- Bake for 20-24 minutes until the edges are golden and the center is just set.
- Cool before cutting.
Mint Oreo Truffle Balls

Ingredients
- 1 standard package (about 36) Oreo cookies
- 4 oz (½ block) cream cheese, softened
- 2-3 tbsp milk
- ½ tsp peppermint extract
- 1 ½ cups semi-sweet chocolate chips
- 1 tsp butter
Optional toppings:
- Crushed Oreos
- Melted white chocolate
- Green sprinkles
Directions
- Put all the Oreos (cream filling included) into a bag or food processor and crush into fine crumbs.
- In a bowl, mix Oreo crumbs, cream cheese, milk and peppermint extract.
- Mix the combination until it becomes a thick and slightly sticky dough. If it feels too dry, add a tiny splash more milk.
- Scoop about 1 tablespoon of the mixture and roll into balls. Place them on a lined tray.
- Rest the tray in the fridge for at least 30 minutes to help hold the shape when dipping.
- Microwave chocolate chips and butter in 20-second intervals, stirring each time, until smooth.
- Use a fork or toothpick to dip each ball into the melted chocolate. Let the excess drip off and then place them back onto the tray.
- Before the chocolate sets, add toppings like crushed Oreos or drizzle with white chocolate.
- Refrigerate for another 15-20 minutes until fully set.
